Servings: 4-6

Prep Time: 15 Minutes

Cook Time: 30 Minutes

Ingredients

  • 1 1/2 cup medium-grained rice
  • 1 chicken breasts, diced
  • 250g chorizo sausage
  • 1 teaspoon tumeric
  • 1 1/2 teaspoons cumin
  • Pinch of saffron
  • 1 lemon, cut into wedges
  • 1 L chicken stock
  • 1 tablespoon olive oil
  • 1 brown onion, chopped
  • 2 garlic cloves, crushed
  • 1 red capsicum, finely chopped
  • 400g can diced tomatoes
  • 1 cup frozen peas, thawed

Instructions

  1. Heat oil in a large frypan over medium to high heat.
  2. Add chicken and chorizo to frypan. Cook for 2 to 3 minutes until golden.
  3. Remove and put aside.
  4. Add onion, garlic and capsicum to frypan. Cook for 3 minutes or until soft.
  5. Add chicken, chorizo, tumeric, cumin, saffron, cayenne pepper, rice, tomatoes and stock. Stir until well combined.
  6. Bring to the boil, then reduced heat to a simmer and cook covered for 20 minutes, stirring occasionally until rice is tender.*
  7. Remove lid. Add peas and prawns and cook for a further 3 minutes or until prawns are cooked .
  8. Garnish with lemon wedges and serve immediately.
  9. *If rice is not cooked after 20 minutes, add some water and cook until rice is tender.

      Add 1/2 teaspoon cinnamon and teaspoon smoked paprika also cut up a chorizo and fry with the chicken
