Healthy breakfasts are a fantastic way to start off your day! This low-carb recipe for asparagus frittata is not only delicious, it's really easy to make, saving you time in the mornings while still giving you a good meal.

Prep Time: 10 Minutes

Cook Time: 15 Minutes

Ingredients

  • 450 g asparagus, trimmed, cut into 1-inch lengths
  • 6 eggs, lightly beaten
  • 225 g shredded Swiss cheese
  • 2 tbsps olive oil
  • 80 g minced shallots
  • 1 medium onion, finely chopped
  • ½ tsp salt
  • dash of black pepper
  • 250 ml water

Instructions

  1. Pour water into a saucepan and bring to a boil.
  2. Add asparagus in, cover and cook for 3 minutes.
  3. Drain and submerge asparagus in ice water immediately.
  4. Drain once more.
  5. Saute onion and shallots in an ovenproof skillet until transluscent.
  6. Add asparagus and mix.
  7. In a bowl, combine the eggs, half the cheese, salt and pepper.
  8. Pour over the asparagus.
  9. Cover and leave to cook over medium heat for 8-10 minutes, until eggs have almost set.
  10. Remove cover and transfer skillet to a broiler, 6 inches from the heat for 2-3 minutes, until eggs have set.
  11. Sprinkle with the remaining cheese.
  12. Cut into wedges and serve immediately.
