Valentine’s Day – it’s an occasion that calls for celebrating and relaxing with bubbly, wine and cocktails. We’ve come up with some fabulous cocktail recipes that you can use to toast to love with your special someone; if you’re happily single, you can also make these for an awesome night with friends!

- 400ml Tia Maria , chilled
- 250ml double cream
Pour the Tia Maria into small cocktail or liqueur glasses. Carefully pour the cream into the glasses over the back of a teaspoon so it floats on the surface of the Tia Maria and makes a separate layer. Dust the cream with cocoa by shaking it through a tea strainer and serve.
- 1 sugar cube
- 2-3 dashes Angostura bitters
- 30 ml brandy
- Orange slice for garnish
- Maraschino cherry for garnish
Place the sugar cube in the bottom of a Champagne flute. Saturate the sugar cube with dashes of the Angostura bitters and add the brandy. Fill with Champagne and watch the sugar cube dissolve in a fountain of bubbles. Garnish with the orange slice and cherry, and serve.

- 3 tablespoons grenadine
- 3 tablespoons Cointreau
- 2 tablespoons brandy
- 1 3/4 cups champagne
- Raspberries, apples, or other seasonal fruit
Fill a small ice bucket halfway with ice. Pour grenadine, Cointreau, brandy, and champagne over ice. Stir gently, and ladle punch into 2 wide-mouthed stemmed glasses. Garnish punch with raspberries, apples, or any other fruit in season.

- 15 ml chocolate vodka
- 15 ml dark chocolate liqueur
- 15 ml amaretto
- 15 ml Kahlúa
- Baileys to top off
Shake ingredients with ice. Rim the glass with shaved chocolate. Strain cocktail and top with Baileys, whipped cream, and cocoa.
White Strawberry Sangria
- 1 (750 ml) bottle dry white wine, such as pinot grigio or sauvignon blanc
- 1/2 cup strawberry schnapps
- 1/4 cup sugar
- 2 cups sliced fresh strawberries
- 1 whole strawberry (optional)
Stir wine, schnapps and sugar together in a pitcher until sugar dissolves. Add sliced strawberries and chill 1 to 4 hours. Serve over ice, and garnish with whole strawberries, if you want.
Rose Prosecco Cocktail
- 1 bottle prosecco
- 4-6 tbsp rose syrup
Pour the prosecco into the serving glasses and then drizzle the rose syrup gently on top, allowing it to trickle down to the bottom.
Romance Caribeno Cocktail
- 45 ml Malibu rum
- 30 ml Cointreau, or Grand Marnier
- 15 ml fresh lime juice
- 15 ml fresh lemon juice
- 90 ml chilled lemon-lime soda
- Dash of grenadine, for color
- Lemon slice
Add rum, Cointreau and juices into a cocktail shaker filled with ice and shake for five seconds. Pour into a chilled fluted glass. Fill the rest of the glass with lemon-lime soda. Add a dash of grenadine, and garnish the rim with a lemon slice.
