Chocolate mousse isn’t just for kids – you’ll see how your guests’ eyes will brighten up when you tell them it’s what you’re having for dessert. This recipe is a sure-fire hit, not just because it tastes decadent - it also looks pretty no matter how you present it. Because anyone can make this easy recipe, it can be prepared and chilled a day ahead when expecting guests.
- 1 tbsp sugar
- 3 eggs
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 2 tbsp strong coffee or espresso
- 140g dark chocolate
- Whip the cream until soft peaks form, then chill in the fridge.
- Mix coffee (or espresso), diced butter and the finely chopped chocolate in a double boiler over hot water. Stir frequently to smoothen the mixture.
- Remove from heat to cool down.
- Separate eggs. Whip egg whites in a bowl until foamy and thick. Add the sugar and beat until you see soft peaks.
- Once the chocolate is warm (a bit warmer than body temperature), add in the yolks and stir.
- Stir in a third of the cream, then fold in half of the egg whites.
- Keep folding until incorporated properly, then add the remainder of the egg whites and cream.
- Serve using a pipe or a spoon. You can use dishes, wine glasses or serving bowls for presentation.
- Chill in the fridge for at least 8 hours to a whole day.
- You can also layer in fresh berries and extra whipped cream.
- Dark (bittersweet) chocolate is only optional in this recipe - you can use milk chocolate just as well - although the bittersweetness has a tastier, fuller effect on the mousse.
- Others will go as far as add a whole cup of sugar - this entirely depends on your personal preference.
