Grilled Eggplant Salad

  • 1 large eggplant, cut crosswise into 1cm slices
  • 250 g coarsely chopped tomato
  • 2 tsp capers
  • 30 g crumbled feta cheese
  • 3 tsp red wine vinegar
  • 3 tsp balsamic vinegar
  • 1 tsp extra virgin olive oil
  • 1 1//2 tbsp chopped fresh basil
  • 1/4 tsp dried oregano
  • 1 garlic clove, minced
  • Salt and pepper


  1. Set the grill to a low-medium heat and allow to heat for 2-3 minutes.
  2. Lightly coat the eggplant slices with a brush of extra virgin olive oil.
  3. Place the slices on a grill pan for 5 minutes per side, or until tender. Allow to cool.
  4. Cut eggplant slices into quarters.
  5. In a large bowl, combine eggplant with the rest of the ingredients.
  6. Season with salt and pepper.
