A vegetarian low carb recipe
Take advantage of the wonderful flavours that fresh fruits and vegetables provide in this healthy, refreshing yet filling recipe for gazpacho. Not only is this soup ideal for those on a low-carb diet, it's extremely easy to make and is guaranteed to brighten up any dining table with its colour!

Ingredients
- 670 g fresh peaches, peeled, pitted and chopped
- 3 medium tomatoes, chopped
- 1 medium cucumber, peeled and chopped
- 1 large sweet onion, chopped
- 1 garlic clove, minced
- 120 ml water
- 2 tbsps white wine vinegar
- 2 tbsps extra-virgin olive oil
- 2 tbsps flat-leaf parsley, coarsely chopped
- coarse salt and freshly ground pepper, to taste
Instructions
- In a food processor, pulse water, peaches, tomatoes, cucumber, onion, garlic, vinegar, olive oil, a dash of salt and pepper until smooth.
- If gazpacho is too thick, add a bit more water.
- Add parsley, season with salt and pepper, and stir.
- Cover and refrigerate soup for 2-4 hours.
- Garnish with cucumber slices or parsley sprigs. Serve.
