Moist and Delicious Baked Salmon Recipe, 4.2 out of 5 based on 5 ratings Here’s a recipe for baked salmon wrapped in foil – suitable for novice cooks or old hands in the kitchen. Tasty, moist and flavourful, this dish is best served with a vegetable dish or over rice.

Tip: Brush a little olive oil in the aluminium foil to make sure the fish doesn’t stick into it.

Baked Salmon

Servings: 2

Prep Time: 15 Minutes

Cook Time: 45 Minutes

Ingredients

  • 2 garlic cloves, minced
  • 2 tbsp light olive oil
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 1/2 tbsp lemon juice
  • 3 tsp fresh parsley, chopped
  • 2 (170 g) fillets salmon

Instructions

  1. In a bowl, mix together garlic, oil, basil, salt and pepper, lemon juice and parsley.
  2. Place salmon fillets in a baking dish and drizzle with the marinade.
  3. Set aside in the fridge for 1 hour, turning occasionally.
  4. Preheat oven to 190 C.
  5. Place fillets in an aluminium foil, pour in marinade over the fish and seal.
  6. Transfer salmon in the baking dish and bake for 35-45 minutes, or until fish is easily flaked with fork.
