Tip: Brush a little olive oil in the aluminium foil to make sure the fish doesn’t stick into it.

Ingredients
- 2 garlic cloves, minced
- 2 tbsp light olive oil
- 1 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 1/2 tbsp lemon juice
- 3 tsp fresh parsley, chopped
- 2 (170 g) fillets salmon
Instructions
- In a bowl, mix together garlic, oil, basil, salt and pepper, lemon juice and parsley.
- Place salmon fillets in a baking dish and drizzle with the marinade.
- Set aside in the fridge for 1 hour, turning occasionally.
- Preheat oven to 190 C.
- Place fillets in an aluminium foil, pour in marinade over the fish and seal.
- Transfer salmon in the baking dish and bake for 35-45 minutes, or until fish is easily flaked with fork.
