Morning Glory Muffins

These are a few of my favourite things……
Julie Andrews I am not (but that still didn’t stop me from belting it out at the Sound of Music Sing a Long show). However, it is high time to showcase some of my favourite things: new kitchen goodies, mornings, and produce.
When I discovered the joy of cooking for myself, I had some pretty ordinary kitchen utensils and appliances. As I’ve become more confident and experimental, I have upgraded a number of items in my kitchen and my go to source is Kitchenware Direct.
These guys are the BOMB and have some awesome daily prices as well as specials that make you want to click to buy. Plus, items are delivered at rocket speed and you don’t have to try to push that hideous trolley through the shopping mall with a massive box that wants to go in the opposite direction that you do. I’ve bought from them numerous times and two of my purchases are showcased below.
As for mornings……..I never used to be a morning person. As a teenager I was horrible (reminder my children read all my recipes so high school friends please refrain from elaboration!). My poor step father would say, “Good morning, Lisa” and get nothing back but a glare and a grunt. But Law School changed me as early morning was the best study time. Now I relish the solitude that early mornings provide and am still studying in the morning!
Produce now consumes my recipe planning and shopping. As admitted many times, I’m a sucker for pumpkin and apple but also love zucchini.
What better way to give you a sample of my “brown paper packages tied up with string” than a super recipe that has been around for years but I’ve adapted to not only be gluten free, but super low fat as well. At only 3 Weight Watchers pro points each, you won’t “feel so sad” about heading off to work.

Morning Glory Muffins

Prep Time: 45 minutes
Cook time: 20 minutes
Produces: 12 standard size muffins
Ingredients:
- 1 cup pumpkin puree
- 1 cup gluten free all purpose flour
- 1 cup gluten free oats (I use Bob’s Red Mill wheat free)
- 2 tsp baking soda
- ½ tsp cinnamon
- ¼ tsp ginger
- ¼ tsp nutmeg
- ¼ tsp salt
- 1 Tbls Stevia or Natvia
- 1 egg
- 1/3 cup applesauce
- 1 shredded apple
- 1 shredded zucchini
Streusel Topping:
- 2 tsp Stevia or Natvia
- ¼ gluten free oats
- 2 Tbls applesauce
- 1 tsp cinnamon
Instructions:
Preheat oven to 170, line 12 muffin tins with papers and lightly spray with low fat cooking spray.
The first thing I did was use my nifty Hot and Cold Cuisinart Blender I got from Kitchenware Direct to make the pumpkin puree.

This purchase was nearly $100 less than in the local stores and, as I eat soup several times a week, is the perfect all in one for veggie soup. Cut up the pumpkin, pop in a bit of water, leave to boil and simmer and blend all in the one vessel. You can also microwave and mash if you prefer.
Then it was time to try out my super neat Magimix food processor.

I had a standard food processor that I was pretty happy with until I used a Magimix at a cooking class. I just couldn’t justify the $649 price tag though, so, imagine my glee when it was a featured special at Kitchenware Direct for $399!!! Sold and delivered! This machine is awesome and I used it to finely shred my zucchini and apple for this recipe. Place in a tea towel and squeeze to remove all the excess moisture.

Finally, using a food processor, finely process the 1 cup of oats to make oat flour.

Combine all the dry ingredients, except the sweetener, in a bowl and whisk to combine. In a separate bowl combine the pumpkin puree, sweetener, egg, and applesauce and then add to the dry mixture. Fold in the shredded apple and zucchini.

Divide the mixture between the 12 muffin cups.
For the streusel topping combine all the ingredients in a small bowl until crumbly. Top each muffin with a small spoonful and then place in the oven for 20-25 minutes.

Enjoy with a coffee in the quiet of the morning whilst trying to restrain yourself from singing “How do you solve a problem like Maria?”
